Yes, Apploye takes multiple screenshots if any user has multiple monitors. So, all the monitors will have screenshots.
Apploye also takes up to 3 screenshots in the 10-minute time period (depending on the screenshot frequency from activity settings).
Even though you might not see all of those screenshots in thumbnails of a 10-minute time frame, you can clearly see how many screenshots there are and how many screens/monitors are connected from the image and monitor icon, respectively.
